Grilling Squash

Neither Doug nor I have cared much for the taste of squash no matter what kind of squash it was. When we first got them in our CSA box, I was giving them away to people at work. But in the last two boxes we had squash and so I decided to see what other ways I could cook it. I found a recipe for grilling squash. So we tried it and really liked it. Doug was anxious to use his grill since we don't grill meat at home anymore. I looked at the marinades these recipes used and discovered that most of them used balsamic vinegar and olive oil. So I decided to just use my Newman's Own Balsamic Vinaigrette. The recipes call for marinating them all day if you do it in the refrigerator. So I cut the squash up in the morning before I went to work. I added the Newman's Own, some roasted garlic that I had and some roasted shallots that I had. I used a plastic zip lock bag to marinate them in and placed them in the refrigerator. Doug grilled them on the grill. He sprinkled some Italian seasoning on each side. He let them cook until they were a little crispy. The first time I cut them length wise and then in quarters like pickle spears you see. Doug asked me to cut them into thin round shapes the second time. Either way they turned out great along with the kale salad.
