Fun with Salads

Marinated Veggies
This weekend we visited Albert, Ashley, and Emma in Tulare, CA. Ashley loves salads. They wanted to try a new take and bake pizza from Papa Murphy's for dinner on Saturday. And so we decided to fix a salad to go with it. By the way, Doug and I got a different pizza there because we wanted a thin crust pizza. So we ordered their Herb Chicken Mediterranean deLITE® with Olive Oil, Garlic, Herb Chicken, Spinach, Sun-dried Tomatoes, Feta, Zesty Herbs.
We really liked the pizza. I picked the chicken off and gave it to Pearl. We noticed that they had a lot of healthy eating options there so I'm posting the link to their menu for you:  Papa Murphy's menu

Before we got our Tanaka Farms CSA box, Doug had spotted some kohlrabi at Whole Foods. He loves to eat it raw. So we bought some of the green. In our CSA box we got a large purple kohlrabi. So I took the three small green ones with us this weekend. We also had bought some grape tomatoes and cucumbers at Whole Foods. We got the radishes and spring lettuce from our CSA box.

 I like to try new things in salads, often not following a recipe, but just trying things that sound good to me. I didn't bring any of my spices this weekend so I used what Ashley had. I cut up the tomatoes, cucumbers, radishes, and kohlrabi and marinated it in Newman's Own Balsamic Vinaigrette Dressing, added some garlic, basil and parsley spices that Ashley had. I added the marinated veggies to the spring lettuce mix and some radicchio that I had also gotten at Whole Foods. I put out some cheddar cheese, croutons, and roasted soy nuts that they could add in. Then they added whatever dressing they like. I used all organic veggies. Doug didn't use any additional dressing since he felt the marinated veggies had a good enough flavor.

I have some plans to use the purple kohlrabi in a kale salad later this week.
