Cheesy Garlic Mashed Potatoes
I'm sorry I didn't get a picture of this dish. I made this dish for Christmas dinner, along with a lot of other things, because my older son requested it. I also did the yam cobbler dish that I posted on here earlier, fixed a berry fruit salad with a raspberry merlot dressing, a tossed salad and Doug fixed the ham for the meat eaters.
I used 8 large potatoes
a small container of sour cream but I'm not sure how many ounces it was
6 cloves of garlic
1 cup of chopped parsley
1 bag of Parmesan cheese
1 bag of cheddar cheese
Boil the potatoes in water on the stove until they are tender, then drain and return to the pan.
Peel and chop the garlic, add to some olive oil and saute the garlic.
Chop up a cup of fresh parsley.
Add the cheeses, garlic, parsley and sour cream and mash them together. Some recipes called for milk or butter, but my family likes the potatoes firm and not creamy or runny.
Now if it were me I would have added some onions or onion straws to it.
